Zunka with Drumsticks
Thick curry of gram flour with drumsticks - A tasty Maharashtrian dish
You will need
2 drumsticks, peeled and cut into 5 cm pieces
1 tablespoon oil
1 teaspoon mustard seeds
1/2 teaspoon cumin seeds ( jeera )
1/4 teaspoon asafoetida ( hing )
1 spring curry leaves
2 tomatoes, chopped
1 cup ( 100 ml ) water ( for tomatoes and drumsticks )
1 cup ( 200 g ) besan gram flour
1/2 cup ( 100 ml ) water ( for besan )
1 teaspoon red chilli powder
1/2 teaspoon turmeric powder
Salt and sugar to taste
1 tablespoon coriander leaves, chopped
1 tablespoon oil
1 teaspoon mustard seeds
1/2 teaspoon cumin seeds ( jeera )
1/4 teaspoon asafoetida ( hing )

1 cup ( 100 ml ) water ( for tomatoes and drumsticks )
1 cup ( 200 g ) besan gram flour
1/2 cup ( 100 ml ) water ( for besan )
1 teaspoon red chilli powder
1/2 teaspoon turmeric powder
Salt and sugar to taste
1 tablespoon coriander leaves, chopped
Method
Mix 1 cup besan with 1/2 cup water, red chilli powder, turmeric powder, salt and sugar. There should be no lumps. Keep aside.
In a wide kadai / frying pan, heat oil. Add mustard seeds. When they splutter add cumin seeds ( jeera ) and curry leaves.
Add peeled 5 cm pieces of drumstick and chopped tomatoes. Add one cup water and cook covered till done and soft ( approximately 15 minutes on a medium heat ).
Add besan mixture to the drumsticks and stir over a low heat till cooked and dry. There should be no gravy at all. Sprinkle chopped coriander leaves and serve with bhakri of jowar or bajra.

this looks delicious Niya, I'll have to get some drumsticks next time I'm at the market. They're not easy to find here in Sonoma.
