Carrot Halwa ( Gajar Ka Halwa ) - A delicious sweet in Indian cuisine !!
Cooking Time: 35 minutes
Serves: 4 ( 50 g ) dessert cups
Ingredients
1 tablespoon ghee
5 carrots, finely grated
60 ml milk (4 tablespoon)
4 - 5 tablespoon sugar
2 teaspoon shallow fried teaspoon cashew nuts, split or 8 cashew nut splits (optional)
2 teaspoon shallow fried raisins or 8 raisins

Method
Wash, clean and grate carrots. Keep aside.
In a wide frying pan / kadai, heat 1 tablespoon ghee. Add finely grated carrots and fry for 3 - 4 minutes.
Add milk. Mix all the ingredients well. Stir occasionally. Cover with a lid and cook on a low heat for 15 minutes or till the carrots cooked / carrots well blended with milk / carrot mixture thickens / fragrant.
At this stage, add sugar and cook on a low heat for another 10 - 12 minutes until water (water from the sugar) dries up / halwa thickens / leaves from the sides of the pan.
Decorate with shallow fried split cashew nuts and raisins. Serve warm or cool.
