Aloo Gobi Mutter Ki Subzi
A side dish with Rotis / Rice
Serves: 3
You will need
3 potatoes, cut into cubes
125 g cauliflower florets
100 g mutter ( green peas, fresh or frozen )
1 tablespoon oil
1 onion, finely sliced
1/2 teaspoon red chilli powder
1/4 teaspoon turmeric powder
1/4 teaspoon amchur powder ( dry mango powder )
1/2 teaspoon garam masala powder
1/2 teaspoon salt ( or to taste )
1 tablespoon water
1 teaspoon chopped coriander leaves ( optional )

Method
Dilute red chilli powder and turmeric powder in 2 teaspoon water and keep aside.
Wash and cut potatoes into cubes ( or desired shape ) and boil separately till done / softens ( or Microwave High for 4 minutes in 1/4 cup water ).
Wash and clean cauliflower florets.
Heat oil in a frying pan. Add sliced onions and fry till till golden color.

Add diluted red chilli powder and turmeric powder. Mix well and saute for 2 - 3 minutes until the raw smell disappears.
Add boiled potatoes, cauliflower florets, green peas ( mutter ), amchur powder , garam masala and salt to taste. Stir all the ingredients well for 2 - 3 minutes.

Sprinkle 1 tablespoon water, cover with a lid and cook on a low heat ( stir occasionally ) for 10 - 12 minutes or until done / vegetables softens / water dries up.
Garnish with chopped coriander leaves ( optional ).
Serve as a side dish with Rotis / Rice.

I've been waiting for a potatoes and peas recipe to show up. Years ago, I made this with a generic curry powder, but I know it could be better. And here it is!
