Fried rice with Mushroom & Spring Onions

Serves: 2

Ingredients

2 cups ( 400 g ) cooked & cooled rice ( each grain should be separated )
1 tablespoon oil
1 bunch spring onion
12 mushrooms
1/2 teaspoon salt ( or to taste )
1/2 teaspoon pepper powder

Method

Wash and clean spring onions and mushrooms.

Chop spring onions finely.

Cut mushrooms into 1/2 - inch pieces.

Heat oil in a wide pan / wok. Fry chopped spring onions for 5 - 7 minutes till fragrant.

Add mushrooms and fry for 2 - 3 minutes.

Add salt and pepper powder. Cover with a lid and cook on a low heat for 5 - 8 minutes until the mushrooms softens / done.

Add cooked and cooled rice. Stir continuously for 5 minutes till the rice well mixed with all the ingredients.

Sprinkle extra pepper powder if required ( pepper powder will enhance the taste of fried rice ).

Serve hot with Vegetable Manchurian or any dishes of your choice ( Chinese or North Indian ).
