Potato Vaag ( Pickle type curry or spicy curry )

Serves: 4
You will need
3 potatoes, boil and cut into cubes
1/4 teaspoon turmeric powder
1/4 teaspoon salt
2 tomatoes, cut into cubes
8 dried red chillies ( long variety )
2 teaspoon coriander seeds
1/4 cup ( 50 g ) coconut, grated
2 teaspoon oil
1/2 teaspoon mustard seeds
1 spring curry leaves
1/2 teaspoon salt ( or to taste )
Extra 100 ml ( 1 cup ) water
1/4 teaspoon turmeric powder

Method
Wash and boil ( or pressure cook ) potatoes in 2 cups water with salt and turmeric powder . Peel and cut into small cubes.
In an iron kadai, dry roast red chillies with coriander seeds until fragrant ( approximate roasting time 10 minutes on a medium heat and stir continuously ) and grind with grated coconut in a mixer. Add 2 - 3 tablespoon water during grinding and make a smooth paste.
Heat oil in a pan. Add mustard seeds. When they crackle, add curry leaves and saute for 2 minutes.

Add boiled potato and tomato pieces. Stir well, cover with a lid and cook on a low to medium heat for 8 - 10 minutes.
Add ground coconut paste, extra 1 cup ( 1 - 1 1/4 cup ) water and extra salt to taste. Turn over. Bring to boil on a low to medium heat for 8 - 10 minutes until semi - solid or gravy thickens. Serve with Rice / Rotis / Dosa / Polo.
