Plain Cup Cake (without butter)

Makes: 10 – 12 cup cakes

Tip – Please use same measuring cup to measure flour, sugar and milk.

Ingredients

1 cup ( 200 g ) flour

1 1/4 teaspoon baking powder

1/ 4 teaspoon salt (2 pinches)

3 /4 cup sugar

3 /4 cup milk

1 egg

1 teaspoon vanilla essence

Method

Sieve thrice flour, baking powder and salt.

Mix half of the flour mixture, half milk, sugar, and slightly beaten egg. Add remaining flour and mix until the flour is dampened.

Beat this mixture at low speed for two minutes (or transfer flour - egg mixture, sugar, milk and vanilla essence into a mixer bowl and beat for 1 – 2 minutes or until smooth).

Add remaining milk and vanilla essence. Beat for a minute longer.

Preheat oven (OTG) at 375 * F or 190 * C.

Spoon into paper bake cups or greased cupcake pan ( up to 3 /4 level ) and bake at 375 * F or 190 * C for 15 - 17 minutes or until done / golden color on top.
