Keema / Kheema Rice

A fantastic rice preparation, made of minced meat (chicken) and Indian spices !!!

Serves: 2

You will need

1 tablespoon oil

1 onion, finely chopped

6 cloves garlic, finely chopped

2 green chillies (1 big or 2 small), slit lengthwise

½ - inch piece of ginger, finely chopped

6 curry leaves

½ teaspoon red chilli powder

¼ teaspoon turmeric powder

½ teaspoon pepper powder

200 g minced meat (chicken or lamb (mutton))

¾ teaspoon salt (or to taste)

2 cups (400 g) cooked and cooled rice

Method

Wash minced meat and squeeze out water completely.

Dilute red chilli powder, turmeric powder and pepper powder in 1 tablespoon water (spice mix). Keep aside.

In a wide pan, heat oil on a medium heat. Add chopped onion and fry till golden color.

Add chopped onion and fry till golden color.

Add slit green chilli, chopped ginger and curry leaves. Saute on a low heat until fragrant and crisp.

Add diluted spice mix (red chilli powder – turmeric powder and pepper powder). Saute on a low heat for 2 minutes until the raw smell goes and water dries up.

Add minced meat and salt to taste. Stir all the ingredients well. Cover with a lid and cook on a low to medium heat for 10 – 12 minutes or until done / color change on minced meat / fragrant/ you may get ¼ cup (3 tablespoons) gravy form minced meat / keema.

At this stage, add cooked and cooled rice. Stir continuously for 3 minutes until all the spices / keema well mixed with rice. Adjust with salt and pepper if you required. Cover with a lid and cook on a low heat for 8 minutes. Serve hot with any gravy dishes of your choice or with salad / raita / pickle/ potato chips / Pringles ..
