Chilli Fish (Dry variety) - no added food color and ajinomoto (MSG)
A tasty dish, goes well with Fried rice and Noodles !!
Serves: 3
You will need
For fish:
300 g fish cubes, approximately 12 fish pieces (pick good quality fish), cut into ½ - inch size cubes
1 teaspoon soy sauce
½ teaspoon pepper powder
½ teaspoon red chilli powder (or red chilli paste)
½ teaspoon salt
200 ml oil (to deep fry)
Extra 1 tablespoon oil
Method
Wash and clean fish cubes. Drain out water thoroughly. Wipe each fish cubes with a kitchen towel.
In a wide bowl, marinate fish with above ingredients and keep aside for one hour.
For the batter:
¼ cup (3 tablespoons) corn flour
¼ cup (3 tablespoons) all purpose flour
1 egg, beat well
2 tablespoons water
In a bowl, mix all the ingredients together and make a smooth batter.
Method
Heat oil in a pan. Reduce heat to medium, dip each marinated fish cubes in batter and deep fry till golden color on a both the sides. Drain out from oil and place on kitchen towel to absorb extra oil. Do not use this oil for final preparation.
Other ingredients
1 tablespoon oil
1 green chilli, finely chopped
½ - inch piece ginger, finely chopped
8 cloves garlic, finely chopped
1 onion, cut into cubes and separate each layer
3 tablespoons red chilli sauce
1/2 teaspoon red chilli powder
1 tablespoon tomato sauce
1 teaspoon soy sauce
½ teaspoon salt
1 ½ teaspoon corn flour
4 teaspoons water
Method
In a bowl, mix red chilli sauce, soy sauce, red chilli powder, tomato sauce and salt ( Sauce mix).
Dilute 1 ½ teaspoon corn flour with 4 teaspoons water. Make a smooth solution and keep aside.
Heat oil in a wide pan. Add chopped green chilli, garlic and ginger. Fry on a low heat for 3 – 4 minutes until the color changes.
Add onion and fry light pink in color.
Add sauce mix and gently stir well. When it starts boiling, add deep fried fish pieces and gently mix well.
Add diluted corn flour solution and stir well. Cook again on a low heat for 5 – 8 minutes until gravy thickens and gravy well coated on fish pieces / fragrant. Serve hot with Fried rice / Noodles.
