Wholewheat Chocolate Chips Banana Muffins

Makes: 4

Please use standard measuring cup and teaspoon to measure all the ingredients (standard measuring cup of 200 ml / 8 oz)

Tip: An easy way to mash bananas is to peel, cut into chunks, and place in a zip-top plastic bag, leaving about 1/4" open at the top of the bag for air to escape. Gently knead/flatten/squash the banana chunks with your fingers.

Ingredients

½ cup (100 ml / 4 oz) wholewheat (atta)

Extra ¼ cup (50 ml / 2 oz) wholewheat (atta)

1 teaspoon baking powder

½ teaspoon baking soda

4 small size well ripe bananas (120 g)

3 tablespoons (45 g) melted butter

¼ cup (50 ml/ 2 oz) sugar

1 lightly beaten egg

2 tablespoons chocolate chips (optional)

2 teaspoon extra butter to grease muffin mould

Method

Grease muffin moulds with butter and keep aside.

Preheat oven (OTG) at 190*C or 375*F.

Sieve twice wholewheat (1/2 cup + ¼ cup) with baking powder and baking soda.

In a wide bowl, mix well mashed bananas, melted butter, sugar and lightly beaten egg. Make a smooth mixture. Add sieved wholewheat and mix well until well combined. Finally add chocolate chips (reserve 1 teaspoon for decoration) and gently mix well.

Pour muffin mixture into greased muffin mould. Gently arrange reserved chocolate chips on top the muffin mixture and bake at 190 *C or 375 *F till golden color or 20 - 22 minutes.

Keep aside to cool for 10 minutes and serve.
