Thattukada Style Madak Omelette
Madak omelette is popular in Thatthukada centres (fast food centres) in Kerala.
Serves: 1
Ingredients
For omelette:
2 eggs
2 teaspoon milk
1/2 teaspoon corn flour or all purpose flour
¼ teaspoon red chilli powder
A pinch of turmeric powder
Salt to taste ( 1/4 teaspoon )
2 teaspoon cooking oil
For filling:
1 tablespoon finely chopped tomato
1 tablespoon finely chopped onion
¼ teaspoon pepper powder (or to taste)
1 teaspoon finely chopped coriander leaves or curry leaves
Mix all the ingredients and keep it ready.
Method
Whisk egg, milk, corn flour / all purpose flour, red chilli powder, a pinch of turmeric powder and salt together in a medium bowl until soft peaks form ( quantity will be double ).
Lightly coat an omelet pan or dosa pan (11 - inches in diameter ) or big skillet with cooking oil and heat over medium heat 1 minute. Pour omelette mixture into pan, spread it evenly and cook until mixture begin to set on bottom . Turn to low heat. When it leaves from the sides of the pan and almost cooked, sprinkle tomato – onion – pepper powder – curry leaves mixture. Cook for 2 minutes on a low heat.
Fold omelette in half to enclose mixture, folding edges over to seal. Gently press with a flat spatula and cook for 1 minute. Carefully turn other side and cook for 2 minutes on a low heat. Remove from the heat and serve hot with tea / coffee …
