Tomato Coconut Chutney




















Tomato  Coconut  Chutney - A delicious  and easy chutney. Best with idli / dosa / vada …

Serves: 2 - 3

Ingredients

2 teaspoon oil

2 tomatoes, chopped finely

¼ teaspoon hing (asafoetida)

1/2 cup ( 5 – 6 tablespoon )  grated coconut

3 red chillies

1/2 teaspoon salt ( or to taste )

Method

Heat oil in a frying pan on a medium heat.  Fry tomatoes until well blended. Add hing and fry for 2 - 3 minutes.

First grind coconut with 3 red chillies to a fine paste. Before taking out, add tomato and salt to taste and make a smooth paste. Do not add extra water. Serve with idli / dosa / vada …
