Steamed Broken
wheat Sweet - A delicious and steamed dish, made of broken wheat, jaggery
and coconut paste. Jaggery available in Chennai is of a lighter color, hence
the color is not as dark as it should look. Basic recipe from my mom – in – law and sis –
in – law !!
Serves: 5 – 6 (or 1 steel thali of 9 – inches in diameter)
Ingredients
Please use same measuring cup to measure broken wheat, water, jaggery and coconut paste.
1 cup (Indian standard measuring cup of 200 ml / 8 oz) broken wheat (suvve govu)
½ cup water
¾th cup grated coconut
½ to ¾ cup melted and sieved jaggery (or to taste)
¼ teaspoon cardamom powder
1 steel thali or a wide steel bowl
½ teaspoon oil
Method
Soak broken wheat in ½ cup water for 2 hours.
Make a smooth paste of grated coconut in a small mixer bowl.
Sprinkle 1 – 2 tablespoon water when making the paste.
In a bowl, mix together soaked broken wheat, coconut paste
and jaggery. Do not add extra water. It should be medium thick in consistency.
Grease a steel thali (or a bowl) with ½ teaspoon oil. Pour this
broken wheat – jaggery – coconut mixture and steam in a steamer or in a
pressure cooker (without weight) for 20 – 25 minutes until done / till a skewer
/ knife inserted in the centre comes out clean. Remove from steamer and keep
aside to cool for half an hour. Cut into desired shape and size. We can also
shallow fry these slices in 2 teaspoon ghee (like pathali bajjille).
