Nimki



















Nimki – A deep fried crispy snack in North Indian cuisine. Nimki is almost similar to Ronti / Tukdi   in Konkan Cuisine.  Best with tea / coffee..

Makes: 150 g

Ingredients

Please use same measuring cup measuring flour and water.

1 cup / 200 ml / 8 oz maida (all purpose flour / plain flour)

1/2 teaspoon salt

2 teaspoon butter

1 teaspoon ajwain (carom seeds / ayamodakam , it’s good for digestion)

1 tablespoon curd

Water for kneading ( approximately ½  cup)

Cooking oil for frying (250 ml)

Method

In a bowl, mix maida,  salt,  ajwain and butter. Mix well with finger tips until it forms  like soft breadcrumbs.

Add curd and mix well again. 

First starts with  ¼ cup water, then add remaining water (maximum 3 tablespoon, already added curd.  So carefully add water)  and knead into a  medium soft dough. Knead again for 5 minutes and make a perfect dough.

Divide the dough and make 4 lemon sized balls.

Make thin chapati using dry maida. Cut it into 1 - inch width strips. You can make 5 long strips from 1 chapati. Then cut 1 - inch diamond shape pieces from each strips. Here’s a sample photo.





















Heat oil in a kadai on high heat. Reduce the heat to medium and  fry ‘’ Nimkii’’ in batches (4 batches, depending upon the size of the kadai) till golden brown on both the sides.  Drain out from oil and spread on a kitchen paper / paper towel for some time and store it  in an airtight container (or Tupperware dry storage container).  It’ll last for more than a week. It’s a tasty tea time snack and kids as well as well elders  will love it. It’s very crispy than Kurkure and other ready made snacks .
