Pumkin Subzi with Spinach (Dudhi aur palak ki subzi) – No added onion and
garlic
It’s tasty subzi / dry curry, goes with
rice and rotis as a side dish.
Serves: 3 – 4
Ingredients
1 tablespoon oil
1 teaspoon mustard seeds
½ teaspoon jeera (cumin seeds)
1 bunch spinach, wash and chop finely or
roughly
½ teaspoon red chilli powder
1 teaspoon coriander powder
¼ teaspoon turmeric powder
200 g pumpkin (dudhi ), gently peel off
outer skin and cut into cubes
½ teaspoon salt (or to taste)
¼ teaspoon hing (asafetida)
Method
In a small bowl, dilute red chilli powder, coriander powder
and turmeric powder with 2 tablespoon water. Keep aside this spice mix.
Heat oil in a wide pan on medium heat.
Add mustard seeds. When it crackles, add
jeera and fry on a low heat for 30 seconds.
Add washed and chopped spinach. Stir well
for 5 minutes.
Add diluted spice mix and stir well on a
low heat for 2 – 3 minutes until the
water dries up.
Add cubed pumpkin, salt to taste and hing.
Mix all the ingredients well. Cover with a tight lid and cook on a medium heat
for 10 – 12 minutes until done / well cooked. Serve as a side dish with rice or
rotis.
