Featured is a popular snack Udita Gaari ( Small Urad dal vada ). This is made in almost all of our homes (in Kerala ), especially as a prasadam during some poojas. This is also a common temple prasadam in most GSB temples during Nagar Panchami. I'm not sure what is the exact name for Udita Gaari in Karnataka ( especially in Mangalore ).
Makes : 20 udita gaaris
You will need
1 cup urad dal ( wash & soak in water for 1 hour and drain out water completely )
3/4 teaspoon salt
1/4 teaspoon turmeric powder
1 teaspoon pepper powder
1 spring curry leaves
150 ml oil for frying
3/4 teaspoon salt
1/4 teaspoon turmeric powder
1 teaspoon pepper powder
1 spring curry leaves
150 ml oil for frying
Method
Make a thick and coarse paste of urad dal with 1 tablespoon water. Then mix it with chopped curry leaves, turmeric powder, salt to taste and pepper powder.
In a kadai, heat oil. Reduce heat to medium and deep in hot oil ( you can use a teaspoon to get even shape for gaaris ) in batches ( 10 gaaris at a time ) till golden color ( approximate frying time 10 - 12 minutes for each side ) on both sides.
