Sponge Cake Fritters

For Sponge Cake:

Ingredients

All the ingredients should be at room temperature and measure flour, sugar and milk in standard measuring cups.

1 cup ( 200 ml / 8 oz ) all purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
2 tablespoon butter
1/2 cup (100 ml / 4 oz ) hot milk
2 eggs
1 cup sugar ( 200 ml / 8 oz )
1 teaspoon vanilla essence
1 teaspoon honey ( optional )
1 teaspoon finely grated lemon / orange rind ( optional)



Method

Preheat oven at 350 * F or 180* C.

Grease baking dish with 2 teaspoon butter and dust with 1 tablespoon flour ( sprinkle about 1 tablespoon of flour inside a cake pan and shake to coat all greased surface. Turn pan upside down to tap out the excess flour ) or greased butter paper.

Sieve twice flour, baking powder and salt.

Add butter to milk and keep hot,

Beat eggs until thick. Gradually add sugar and continue beating for 5 minutes at medium speed.

Quickly stir in sieved ingredients. Stir till blended; add hot milk mixture, vanilla essence, honey and lemon / orange rind.

Blend thoroughly and pour into a paper - lined and greased or greased round / square baking dish and bake at 180 * C or 350 * F for 25 - 30 minutes or a sewer inserted in the centre comes out clean and also it leaves from the sides of the pan. Cool for a while before turning out onto wire rack.

For Sponge Cake Fritters

Makes: 8

You will need

8 sponge cake slices
100 g maida / plain flour / all purpose flour
90 to 110 ml milk
1/4 teaspoon salt
1 egg, beat well
200 ml oil for frying
2 teaspoon icing sugar or powdered sugar

Method

Make a smooth batter of all purpose flour, milk, beaten egg and salt. Batter should be of pouring consistency. Keep aside for half an hour.

Heat oil in a frying pan. Reduce heat to medium. Dip each cake slice in flour batter and deep fry on a medium heat till golden color on both the sides (4 slices at a time). Drain and place on kitchen towel to absorb extra oil. Sprinkle icing sugar or powdered sugar on top. Serve hot.
