Potato Curry or Potato, Onion ani Tomato galnu Humman
A tasty curry goes well with Rotis / Puris ( dosas too). Humman is a main curry in Konkani cuisine !!!
Preparation time: 10 minutes
Cooking time: 15 minutes (pressure cooker method)
Serves: 3
You will need
1 tablespoon oil
1/2 teaspoon mustard seeds
1/4 teaspoon jeera (cumin seeds)
2 onions (100 g), finely sliced
3/4 teaspoon red chilli powder
1/4 teaspoon turmeric powder
250 g potatoes (3, medium size), cubed
1 tomato (70 g, pick well ripe), finely chopped
3/4 teaspoon salt (or to taste)
250 ml (1 1/4 cup) water (Indian standard measuring cup of 200 ml / 8 oz capacity

Method
Heat oil in a pressure cooker. Add mustard seeds. When they crackle, add jeera. Saute for 1 minute.
Add finely sliced onions and fry till golden color on a low to medium heat.
Add red chilli powder and turmeric powder. Stir well on a low heat for 2 minutes.
Add potato cubes, chopped tomato, salt to taste and 1 cup (200 ml) water. Mix all the ingredients well.

Close cooker. Bring to full pressure on high heat for 3 quick whistles. Reduce the heat to low and cook for 7 minutes. Switch off the heat. Allow the cooker to cool naturally.
Open the cooker. Gently mash potato cubes and tomatoes. Serve hot with Rotis / Puris.
