Sukka Mutton


















Sukka Mutton – A delicious dry preparation of mutton in Indian cuisine. Best with rotis / plain rice / pulao as a side dish !!

Meat  Masala powder for the preparation of curry & dry preparation

Makes: 45 g

Ingredients

3 tablespoon fennel seeds (perumjeerakam)

2 teaspoon cardamom (elakka) seeds from 18 cardamom, do not use skin

2 teaspoon cloves (grambu)

2 teaspoon or 4 small size star anise (thakkolam)

2 cinnamon sticks (karuvappata)

2 teaspoon khus khus (poppy seeds)

Method

Please select good quality spices. Gently wipe cinnamon sticks with a soft dry towel.

Heat iron  karahi / pan on a medium heat. Reduce  the heat to low and gently dry  roast above spices until light fragrant (approximate time 8 - 10 minutes on a medium to low heat). Keep aside to cool for half an hour.

Transfer dry roasted ingredients into  a small mixer bowl and make a fine powder and then sieve it through a fine sieve (now the net weight is 45 g). Store it in an airtight container (or in Tupperware dry storage box). ½ teaspoon meat masala powder required for egg curry  and mushroom (2 servings, 2 boiled eggs or 200 g mushroom) and 1 teaspoon meat masala powder required for 500 g  chicken  / mutton preparation (for curry and biryani).






















For the mutton curry (lamb curry):

Serves: 3

Ingredients

500 g mutton (lamb), cut into medium pieces

½ teaspoon salt

½ teaspoon red chilli powder

¼ teaspoon turmeric powder

2 tablespoon thick curd

Wash and clean mutton. Drain out water thoroughly. In a bowl, mix cleaned mutton with salt, red chilli powder, turmeric powder and curd. Marinate evenly. Cover and keep aside for half an hour.

Other ingredients

2 tablespoon oil

3 big size onions (or 4 medium size onions), thinly sliced

1 tablespoon ginger – garlic paste

8 curry leaves

2 green chillies, slit lengthwise

½ teaspoon red chilli powder

1 ½ teaspoon coriander powder

¼ teaspoon turmeric powder

Marinated mutton (without liquid)

½ teaspoon salt (or to taste)

½ teaspoon pepper powder

½ teaspoon  meat masala powder (homemade or any other meat masala or Kolhapuri meat masala powder)

3 tablespoon water (50 ml)

Method

Dilute red chilli powder, coriander powder and turmeric powder in 3 tablespoon water and make a smooth solution (spice mix). Keep aside.

Heat oil in a pan / karahi on  medium heat. Add thinly sliced onion and fry until golden color.

Add ginger – garlic paste and fry for 1 – 2 minutes  until the raw smell goes.

Add curry leaves and slit green chillies. Fry until crisp and fragrant.

Add diluted spice mix. Stir well on a low heat until the raw smell goes and water dries up.

Add marinated mutton (drain out liquid spice curd mixture from mutton – this step is very important). Stir well on a medium heat for 2 – 3 minutes.

Now add salt to taste, pepper powder, meat masala powder and 3 tablespoon water. Mix all the ingredients well. Cover with a lid and cook on a medium heat for 35 – 45 minutes until well cooked and gravy thickens. 

Stir occasionally.  Final thick mutton  gravy will be 3 – 4 tablespoon . Serve gravy separately (it will be brown in color).

For the sukka mutton (dry preparation):

Ingredients

1 tablespoon oil

1 onion, thinly sliced

6 curry leaves

Mutton pieces from the curry

1/4 teaspoon pepper powder (or to taste – ¼ to ½ teaspoon)

¼ teaspoon meat masala powder

¼ teaspoon salt

Method

Heat oil in a pan on medium heat. Add thinly sliced onion and fry fry till golden color and crisp.

Add curry leaves and fry until fragrant and crisp.

Add cooked mutton pieces, pepper powder to taste, meat masala powder and salt to taste. Stir well on a low heat for 10 minutes until mutton well combined with all the spices and dry in consistency. Serve with rotis / rice / pulao …

Aloo Palak Curry



















Aloo Palak  Curry (no added onion and garlic) – A delicious low calorie curry, made of potatoes and spinach. Best with rotis / puris / rice ..

Serves: 2 – 3

Ingredients

2 teaspoon oil

1 teaspoon jeera (cumin seeds)

¼ teaspoon hing (asafoetida)

½ teaspoon red chilli powder

¼ teaspoon turmeric powder

¾ teaspoon coriander powder

2 boiled potatoes (aloo), separately boiled and  slightly mashed

1 bunch spinach (palak)

½ teaspoon salt (or to taste)

½ (100 ml) cup water

Method

Wash and clean palak (until water becomes clear  and without any dirt and impurities). Chop finely.

Dilute red chilli powder, turmeric powder, coriander powder in 2 tablespoon water and make a smooth solution (spice mix).

Heat oil in a karahi / pan on medium heat. Add jeera seeds and fry on a medium heat until fragrant.
Add hing and fry well.

Add diluted spice mix and  stir on a low heat for 30 – 45 seconds until raw smell disappears and water dries up.

Now add slightly mashed potatoes, chopped palak, salt to taste and ½ cup water (up to the level of aloo and palak). Mix all the ingredients well. Cover with a lid and cook on a medium heat for 12 – 15 minutes until palak well cooked  and gravy thickens. Serve with rotis / pulao …

Potato Bread Cutlet



















Potato Bread Cutlet – A delicious evening snack !!!

Makes: 7 - 8

Ingredients

3 medium size potatoes, boiled and mashed

2 brown bread or whole wheat or normal bread slices

½ teaspoon salt

½ teaspoon red chilli powder

¼ teaspoon turmeric powder

½ teaspoon garam masala powder

1 tablespoon chopped onion

2 tablespoon chopped coriander leaves

200 ml oil (to deep fry)

Method

Dip bread slices in ¼ water for 30 seconds. Immediately squeeze out water. In a bowl, mix all the ingredients  (except oil) with squeezed bread slices and make a soft dough (gently knead and make a soft dough). Adding bread will make cutlet mixture easy to mould and strong.

For the outer covering:

1 tablespoon all purpose flour (maida)

3 tablespoon water

½ cup bread crumbs (or a mix of bread crumbs and powdered corn flakes)

Dilute flour in water and make a smooth solution (without any lumps).

Final procedure:

Divide cutlet mixture into 7 parts. 

Make round or oval shape. Dip each cutlet into diluted maida  solution  and roll in breadcrumbs. 

Breadcrumbs should  be coated  well / evenly  and make strong cutlets.

Heat oil in a frying pan or karahi on high heat. Reduce the heat to medium  (wait for 1 minute,  do not fry on high heat) and deep fry 4 cutlets at a time till brown color and crisp on both the sides. 

Drain out from oil and place on kitchen towel  / paper towel to absorb extra oil. Serve hot with fresh salad (challas) or tomato ketchup or tea / coffee.

Rajasthani Mirchi Vada


















Rajasthani Mirchi Vada - This is a popular street snack of Rajasthan also known as Jodhpuri  Mirchi Vada. Green peppers stuffed with a masala aloo filling and deep fried. Serve with a tangy tomato chutney or white bread. Basic recipe from NDTV Cooks & Niru Gupta !!

Makes: 6

Ingredients

6  large green peppers (big size green chillies)

1/2 cup / 100 ml / 4 oz (Indian standard measuring cup)  besan (chick-pea flour / gram flour)

1/2 teaspoon salt

½ teaspoon red chilli powder

¼ teaspoon turmeric powder

¼ teaspoon hing (asafoetida)

Water (to mix the batter) approximately ½ to ¾ cup

Oil for deep-frying (250 – 300 ml oil)

For the filling:

1 big size or 2 medium size  potatoes, boiled, peeled and mashed

½ teaspoon  salt

1/2 teaspoon red  chilli powder

¼ teaspoon  amchoor  (dried mango powder)

½  teaspoon coriander powder

1/4 teaspoon  asafoetida (hing)

1/2 teaspoon  saunf  (fennel seeds), crushed

2 teaspoon chopped coriander leaves

Mix together the potatoes,  salt, chilli powder, amchoor, coriander powder, asafoetida, saunf and chopped coriander leaves.

For the vada:

Wash and wipe the peppers, slit lengthwise, and de-seed (better to wear a face mask and hand gloves to remove seeds from pepper).

Fill with the potato filling.


















Sieve besan. In a bowl, mix the sieved besan with the salt, red chilli powder, turmeric powder, hing  and enough water to form a  medium thick and  smooth paste (like bajji batter).

Heat the oil till a drop of batter dropped in comes up at once.

Dip the pepper in the batter, and drop it into the hot oil (3 peppers at a time).

Lower the heat to medium and fry till a golden colour on both the sides.

Drain out from oil and place on kitchen towel to absorb extra oil. Serve hot with tomato ketchup or green chutney.
