Aloo Palak Curry (no
added onion and garlic) – A delicious low calorie curry, made of potatoes and spinach. Best
with rotis / puris / rice ..
Serves: 2 – 3
Ingredients
2 teaspoon oil
1 teaspoon jeera (cumin seeds)
¼ teaspoon hing (asafoetida)
½ teaspoon red chilli powder
¼ teaspoon turmeric powder
¾ teaspoon coriander powder
2 boiled potatoes (aloo), separately boiled and slightly mashed
1 bunch spinach (palak)
½ teaspoon salt (or to taste)
½ (100 ml) cup water
Method
Wash and clean palak (until water becomes clear and without any dirt and impurities). Chop
finely.
Dilute red chilli powder, turmeric powder, coriander powder
in 2 tablespoon water and make a smooth solution (spice mix).
Heat oil in a karahi / pan on medium heat. Add jeera seeds
and fry on a medium heat until fragrant.
Add hing and fry well.
Add diluted spice mix and
stir on a low heat for 30 – 45 seconds until raw smell disappears and
water dries up.
Now add slightly mashed potatoes, chopped palak, salt to
taste and ½ cup water (up to the level of aloo and palak). Mix all the ingredients well. Cover with a lid and cook
on a medium heat for 12 – 15 minutes until palak well cooked and gravy thickens. Serve with rotis / pulao …
