Mutter Fried Rice / Fresh green peas fried rice
A delicious fried rice, made of fresh mutter, cooked rice
and seasoning. Best with any gravy dishes
(like korma / egg curry / chicken curry or Chinese gravy dishes …)
Serves: 2 - 3
Ingredients
1 tablespoon oil
1 onion, finely chopped or 1 bunch spring onion, finely
chopped
6 cloves garlic, finely chopped
1 cup fresh mutter, separately boiled (or microwave 1 cup
mutter at 750 W for 3 minutes with 3 tablespoons water)
2 cups (400 ml) cooked and cooled rice (Indian standard
measuring cup of 200 ml / 8 oz capacity)
1/2 teaspoon salt ( or to taste )
1/2 teaspoon pepper powder
Method
In a pan / wok, heat
remaining 1 tablespoon oil. Add chopped onions / spring onions and fry till
pink in color and fragrant.
Add chopped garlic and fry for 3 - 4 minutes.
Add separately boiled mutter and stir well.
Add cooked and cooled rice and salt to taste (Recipe suggestion for Chinese fried rice - add 1 tablespoon oyster sauce and 1 - 2 teaspoon soy sauce at this stage. Avoid adding salt. Soy sauce contains salt). Mix well. Do
not cover with lid. Stir continuously and fry for 5 minutes on a low heat until
rice and mutter are well mixed with all
the ingredients.
Sprinkle pepper powder and serve with any gravy dishes of
your choice.
