Cabbage Upkari
A simple cabbage dish in Konkani cuisine, goes well with rice (also without any spices, onion and garlic) !!
Serves: 2 – 3
Ingredients
2 teaspoon oil
1 teaspoon mustard seeds
½ teaspoon cumin seeds (jeera)
¼ teaspoon urad dal
2 green chillies, slit lengthwise
150 – 200 g cabbage, pick tender leaves and remove thick vein, wash the leaves and finely shredded
½ teaspoon salt (or to taste)
2 tablespoon grated coconut
Method
Heat oil in a pan. Add mustard seeds. When they crackle, add jeera and urad dal. Saute for 1 minute until fragrant.
Add shredded cabbage and slit green chillies. Mix all the ingredients well. Cover with a tight lid and cook on a medium to low heat for 10 minutes until done / well cooked. Do not add water for cooking. Finally, add salt to taste and grated coconut. Mix well. Switch off the heat. Serve as a side dish with rice.
