Coconut Prawns
A delicious starter!!! Recipe from Olive magazine !!
Preparation time: 15 minutes
Serves: 2 – 4

Ingredients
1 tablespoon cooking oil
1 clove garlic, finely chopped
½ - stick lemon grass, finely chopped
1 deseeded red bird eye chilli, very finely chopped
1 heaped tablespoon desiccated coconut
1 teaspoon grated lemon zest
150 g raw, peeled king prawns
Lime wedges to serve
Method
Fry the garlic, lemongrass and chilli and cook till in 1 tablespoon oil, stirring for a couple of minutes. Add the coconut and lemon zest.
Continue to cook over a gentle heat until the garlic colors and coconut begins to turn golden brown. Taking care not to burn the garlic or coconut, continue cooking until they are golden brown, then remove from the pan. Add the prawns to the frying pan. When they turn pink (approximate time 5 – 6 minutes), tip in the coconut mixture, stir well, tip into the bowl, garnish with lime wedges and serve with cocktail sticks.
