Capsicum – Onion – Tomato Fry
A tasty side dish with Rotis !!!
Serves: 2
Ingredients
1 tablespoon oil
1 onion (1 big size or 2 small size),cut into cubes, separate each layer
1 tomato (big size or 2 small size)), cut into cubes
1 capsicum (1 big size or 2 small size), remove seeds and cut into cubes
¾ teaspoon red chilli powder
¼ teaspoon turmeric powder
½ teaspoon salt (or to taste)
Method
Heat oil in a pan. Add onion and fry till light pink color on a medium heat.
Add tomato and fry for 2 minute.
Add capsicum and gently stir for 2 – 3 minutes.
Add red chilli powder, turmeric powder and salt to taste. Mix all the ingredients well. Cover with a tight lid and cook on a low heat for 10 – 12 minutes until done / vegetables well cooked / spices well coated on vegetables. Do not add water for cooking. Switch off the heat. Serve as a side dish with rotis and dal.
