Egg Pepper Fry


















Egg Pepper Fry – A very easy tasty side dish (dry in consistency) goes well with rice / ghee rice / pulao / chapatis / brown breads ..

Serves: 2

Ingredients

2 tablespoon oil

2 onion, medium size, thinly sliced (separate each layer, then it will be easy to fry)

8 cloves garlic, crushed

6 curry leaves

¾ teaspoon red chilli powder

¼ teaspoon turmeric powder

2 boiled eggs

½ teaspoon salt

½ teaspoon pepper powder

Method

Dilute red chilli powder and turmeric powder in 1 teaspoon water and keep aside.

Heat oil in a pan. Add thinly sliced onions and fry until  golden brown (it may take 12 minutes on a medium to low heat).

Add crushed garlic and fry again on a medium to low heat until golden color and crisp.

Add curry leaves and fry gain until crisp.

Add diluted red chilli - turmeric powder mix. Stir on a low heat for 2 minutes until the raw smell goes.

Add boiled egg, salt to taste and pepper powder. Mix all the ingredients well. Stir continuously on a low heat for 5 minutes. Serve as a side dish with rice / ghee rice / pulao / chapatti ..
