Pasta Chaat / Pasta Salad

















Pasta Chaat / Pasta Salad – A low calorie salad !!

Ingredients

1 cup boiled pasta (Indian standard measuring cup of 200 ml / 8 oz capacity)

1 onion (1 big size or 2 small size), finely chopped

1 tomato (1 big size or 2 small size),  finely chopped (or you can add any fresh vegetables / sprouts of your choice like cabbage, grated beetroot / carrot / tofu / paneer / boiled chickpeas / boiled egg ..)

2 tablespoon chopped coriander leaves (or a mix of mint and coriander leaves)

2  teaspoon lime juice (or to taste)

¼ teaspoon salt (or to taste)

1/4 teaspoon red chilli powder

¼ teaspoon chaat masala powder

2 teaspoon chopped coriander leaves

Method

In a wide bowl / serving dish, mix all the ingredients together. Finally, sprinkle chopped coriander leaves. Serve as snack.

How to cook perfect Pasta ?

Cook pasta according to the direction shown on the packet.

Always cook pasta in a larger pan, with lots of boiling water - it will never stick.

Never, never overcook pasta. It should be just firm enough for you to bite into it - the term for this is ‘’ al dente’’. Fresh pasta rises to the top of the pan in just about a minute - and that’s a sign it’s done.

Rinse pasta in boiling water or cold water after you cook, so that extra starch is washed away.

Always drain pasta in the colander once it’s cooked.

Indian style Penne Pasta



Indian style Penne Pasta

Serves: 1- 2

You will need

200 g penne pasta
1 tablespoon oil
1 onion, finely sliced
8 cloves, garlic, finely crushed
50 ml tomato puree
75 ml boiled milk
50 - 75 g grated cheese
2 tablespoon chopped celery ( stem and leaf ) or coriander leaves
1/2 teaspoon salt ( or to taste )

Method

Cook pasta according to the instruction shown on the packet.

Heat oil in a wide pan. Fry sliced onion and garlic till golden color.

Add tomato puree, boiled milk, grated cheese and chopped celery or coriander leaves. Mix well.

Add cooked pasta, adjust salt to taste and mix well. Cover with a lid and cook on a low to medium heat for 15 minutes or until the sauce thickens / light pink in color. Serve hot.
