Serves: 2 -3
2 potatoes (Cooking tip - please select fresh potatoes with soft skin), peel off the skin and use a slicer / chips maker / grater to make potato chips. Cooking tip - Do not soak it in water. Deep fry immediately.
300 ml oil to deep fry
For the Spice mix:
1 teaspoon red chilli powder
½ teaspoon salt
¼ teaspoon hing
In a small bowl, mix all the spice ingredients together and keep aside.
Heat oil in a frying pan / kadai on high heat. Reduce the heat to medium and wait for 1 minute. Deep fry potato chips in 4 batches (depending upon the size the kadai / frying pan) on medium to low heat (between medium and low) until golden color on both the sides. Drain out from the oil and place on a kitchen towel to absorb extra oil. Sprinkle spice mix (1/4 teaspoon for each batch) when the chips are very hot (optional). Keep aside until normal temperature and later store in an airtight container.
