Mutton (Lamb) Pepper Fry - A tasty dry side dish
with rice / rotis / parathas / pulao / Parotta...
Serves: 2
Ingredients
1 tablespoon oil
2 onion, finely sliced
1 spring curry leaves ( dark green ) or 6 curry leaves
10 cloves garlic, finely sliced
1 teaspoon finely chopped ginger
2 green chillies, slit lengthwise

1/2 teaspoon Kashmiri red chilli powder
1/4 teaspoon pepper powder
1 teaspoon coriander powder
1/4 teaspoon turmeric powder
1 tablespoon water
12 cooked mutton
(lamb) pieces from the curry (North Indian style or South Indian style mutton curry) - use only cooked mutton (lamb).
1/2 teaspoon salt ( or to taste )
Method
Dilute red chilli powder, turmeric powder, coriander powder
and pepper powder in 3 teaspoon water
and keep aside ( spice mix ).
Heat oil in a frying pan. Fry sliced onions till golden
color on a medium to low heat.
Add curry leaves, ginger, slit green chillies and garlic. Fry for 3 - 4 minute
until crisp and fragrant.
Add diluted spice powder mix. Stir well 3 - 4 minutes or
until the raw smell disappears and water dries up.
Add cooked mutton pieces, salt to taste and mix all the
ingredients well. Do not add water when cooking.
Cover with a lid and cook on a low heat for 12 - 15 ( stir
occasionally ) minutes or until done and all the spices well coated on mutton / golden color. Sprinkle extra pepper
powder ( optional ) when serving. Serve as a side dish with rotis / parathas /
rice / pulao or serve as a starter.
