Alle (Inchi / Ginger Chutney / Curry)
A tasty side dish in Konkani cuisine. Awesome combo with Rice !!!
You will need
1 tablespoon oil
2 – inch piece ginger, very finely chopped
1 green chilli, very finely chopped
4 tablespoon (60 g) grated coconut
1 tablespoon water
3 teaspoon thick curd (yogurt)
Make a fine paste of grated coconut with 1 tablespoon water.
In a pan, heat oil. Add very finely chopped ginger and green chilli and fry until golden color and crisp on a medium to low heat. Keep aside.
For seasoning (phann):
2 teaspoon oil
1 teaspoon mustard seeds
½ teaspoon jeera (cumin seeds)
4 curry leaves
Heat oil in a pan. Add mustard seeds. When they crackle, add jeera and curry leaves. Saute on a low heat for 2 – 3 minutes until fragrant and crisp. Switch off the heat. Add grated coconut paste, fried ginger – green chilli mix and 3 teaspoons thick curd. Gently mix all the ingredients. Serve with rice.
