Vanilla Biscuits


Vanilla Biscuits

Basic recipe adapted from BBC Goodfood

Makes: 15 - 18

You will need

1 cup (200g) all purpose flour

Extra ¼ cup all purpose flour

½ cup (100g) powdered sugar

½ cup ( 100 g) butter (or ¼ cup (50 g) butter)

1 egg , lightly beaten

1 teaspoon vanilla essence

Method

Heat oven to 190 *C or 375 * F.

Rub the flour, sugar and butter together until the mixture resembles breadcrumbs.

Alternatively, you can do this in the food processor. Add enough egg and vanilla essence to bring the mixture together to form a soft dough. Add extra ¼ cup flour if required. Do not add milk or water when making dough. Lightly beaten egg is sufficient to make dough.

Flour your hands and shape the dough into a tube, about 5cm in diameter. Cut into 2cm-thick slices or make round balls from the dough and slightly flatten it. Place on a large baking sheet. Space them out as the mixture will spread when baking (leave 1 – inch gap between each biscuit).

Bake at 190 * C or 375 * F for 10-15 minutes until slightly risen and just golden. Cool on a wire rack.
