Baingan Masala
A tasty side dish with rotis !!! (Easy to prepare with minimum ingredients)
Serves: 2 – 3
Ingredients
1 tablespoon oil
1 onion, finely sliced (or 10 shallots (chuvannulli / sambar onion / small onion), finely sliced)
2 small size tomatoes, cut into cubes or any other shape
¾ teaspoon red chilli powder
¼ teaspoon turmeric powder
1 ½ teaspoon coriander powder
2 teaspoon ginger – garlic paste (optional)
2 medium size purple color baingan (brinjal), pick tender baingan, cut into cubes or any other shape
½ teaspoon salt (or to taste)
2 teaspoon chopped coriander leaves
Method
Dilute red chilli powder, turmeric powder and coriander powder in 1 tablespoon water and keep aside (spice mix).
Heat oil in a pan / kadai. Add sliced onion / small onion and fry on a medium to low heat till golden color.
Add cubed tomatoes and stir well.
Add diluted spice mix and stir well on a low heat for 2 – 3 minutes until the raw smell goes.
Add ginger – garlic paste (if using) and stir again for 2 minutes until the raw smell goes and well combined with other ingredients.
Add baingan pieces and salt to taste. Do not add water. Cover with a tight lid and cook on a low heat for 10 – 12 minutes or until done / well cooked. Sprinkle chopped coriander leaves when serving.
