Mixed Vegetable Subzi
A tasty and nutritious home style dry subzi (without gravy) goes well as a side dish with rotis / rice (also without extra spices) !!!
Serves: 2
Ingredients
1 tablespoon oil
1 onion, finely sliced
2 carrots ( medium size), cut into thin slices
8 French beans, cut into thin slices
¼ cup (50 g ), finely shredded cabbage (pick tender leaves and remove thick nerves )
½ teaspoon red chilli powder
¼ teaspoon turmeric powder
½ teaspoon salt (or to taste)
3 tablespoon water
Method
Wash and cut vegetables into equal size (Cook directly or microwave high (750 W) thin slices of carrot and French beans with 3 tablespoons water for 4 minutes 30 seconds. Then add along with cabbage. Do not add 3 tablespoon water for cooking).
Heat oil in a frying pan. Add sliced onion and fry till golden color on a medium to low heat.
Add thinly sliced carrot, French beans and cabbage. Stir well for 2 minutes.
Add red chilli powder, turmeric powder and salt to taste. Mix well. Sprinkle 3 tablespoons water. Cover with a tight lid and cook on a medium to low heat until done / well cooked and water dries up. Open the lid and stir well. Serve a side dish with rotis / rice.
