Mee Goreng / Mi Goreng



















Mee goreng (Indonesian: mie goreng or mi goreng; Malay: mee goreng or mi goreng; both meaning "fried noodles" also known as bami goreng is a dish common in Indonesia, Malaysia, and Singapore. It is made with thin yellow noodles fried in cooking oil with garlic, onion or shallots, fried prawn, chicken, or beef, sliced bakso (meatballs), chili, Chinese cabbage, cabbages, tomatoes, egg, and acar (pickles). Ubiquitous in Indonesia, it can be found everywhere in the country, sold by all food vendors from street-hawkers to high-end restaurants. It is an Indonesian one-dish meal favorite, although street food hawkers commonly sell it together with nasi goreng (fried rice). It is commonly available at mamak stalls in Singapore and Malaysia and is often spicy. Information from Wilipedia.

Recipe of mee goring (my version)

Serves: 1

Ingredients

1 packet mee  (noodles)

1 tablespoon oil

1 onion, thinly sliced

4 garlic cloves

1 green chilli, finely chopped

¼ - inch ginger, finely chopped

1 carrot, cut into thin slices

½ of a bell pepper (capsicum), cut into thin slices

Cooked noodles

















Method

Cook noodles according to packet instructions. Do not sprinkle seasoning from the packet. Keep aside.

Heat oil in a pan. Add thinly sliced onions and fry till golden color. Add chopped garlic, green chilli and ginger. Fry again till golden color and crisp.

Add carrot, capsicum or cooked prawns / cooked bone less chicken / meat balls … and fry again for 5  minutes (if using vegetables cook /  fry until almost done and soft. Do not sprinkle water).

Now add cooked noodles and seasoning from the packet. Mix all the ingredients well. Stir continuously for 5 – 8 minutes until all the ingredients well combined. Serve hot with salad / sambal / .. Decorate with fried egg (optional).

Vegetable Hakka Noodles


Vegetable Hakka Noodles

A tasty noodles, made of vegetables, Oyster sauce and Tomato ketchup and less oil. Homestyle preparation without soy sauce / ajinomoto / food color.

Serves: 2 – 3

Ingredients

1 packet Ching’s vegetable hakka noodles

1 tablespoon oil

6 garlic cloves

1 onion, finely sliced

Any vegetables / shredded boiled chicken / omelette strips of your choice

Or

1 capsicum, remove seeds and cut into 1 – inch thin slices

2 carrots (medium size), cut into 1 – inch thin slices

8 French beans, cut into 1 – inch thin slices

4 tablespoon oyster sauce

4 tablespoon tomato ketchup

Salt to taste

Method

Cook noodles as per the packet instructions. Keep aside.

Heat oil in a wok / frying pan on a medium heat. Add chopped garlic and fry until golden color.

Add sliced onions and fry until pink color.

Add thinly sliced carrot, capsicum and French beans and fry for 1 minute. Cover with tight lid and cook for 8 minutes or until the vegetables well cooked.

Add oyster and tomato ketchup. Mix well on a low heat and well combined with vegetables.

Add cooked noodles and stir continuously for 5 minutes. Adjust with salt if required. Serve hot.

Egg Noodles



Egg Noodles

Serves: 2

You will need

1 packet egg noodles
1 tablespoon oil
1 onion, finely sliced
8 garlic cloves, finely chopped
4 French beans, cut into cubes
1 carrot, cut into cubes (or desired shape and size)
1 tablespoon soy sauce
1 tablespoon tomato chilli sauce
1 tablespoon sweet chilli sauce

For omelette:

2 eggs
1/2 teaspoon salt
1/2 teaspoon pepper
1 teaspoon milk
2 teaspoon oil

Method

For omelette:

Beat eggs with salt, pepper and milk. Heat oil in omelette pan. Pour the egg mixture evenly and make omelette. Keep aside to cool for 10 minutes and later cut it into 1 - inch strips.

For noodles:

Cook noodles according to the instructions shown on the packet.

Separately boil vegetables and keep aside.

Mix soy sauce, tomato chilli sauce and sweet chilli sauce together and aside (sauce mix).

Heat oil in a wok or frying pan. Reduce the heat to medium and fry onion till golden color.

Add chopped garlic and fry for 3 - 4 minutes.

Add boiled carrot and French beans. Mix well.

Add sauce mix and stir well.

Add cooked noodles and omelette strips. Mix all the ingredients well. Cover with a lid and cook on a low to medium heat for 8 - 10 minutes or until the noodles well blended with sauce mix and omelette strips. Serve hot.

Mixed vegetable noodles



Mixed Vegetable Noodles

Serves: 2

You will need

1 packet Vegetable noodles
1 tablespoon oil
6 garlic, chopped
1 onion, finely sliced
1 capsicum, thinly sliced
1 carrot, cut into slices
5 French beans, cut into slices
1 tablespoon tomato sauce
1 tablespoon soy sauce
1 tablespoon garlic chilli sauce
Salt to taste
1/2 teaspoon pepper powder

Method

Cook noodles as per packet instructions.

Boil carrot and French beans separately and keep aside (or microwave high for 3 minutes).

In a wok / wide frying pan, heat oil. Add chopped garlic and fry for 3 - 4 minutes on a medium heat.

Add sliced onion and fry till golden color.

Add capsicum slices, boiled carrot and French beans and fry for 3 - 4 minutes or until soft.

Add tomato sauce, soy sauce & garlic chilli sauce and mix well. Stir well for 2 - 3 minutes.

Add cooked noodles and mix well thoroughly.

Sprinkle pepper powder, adjust salt to taste and stir continuously for 5 minutes or until the noodles well mixed with sauces and vegetables.

Serve hot with any Chinese gravy dishes of your choice.

Capsicum Egg Noodles



Capsicum Egg Noodles

Serves: 2

You will need

1 packet Ching’s Egg / Vegetable noodles
1 tablespoon oil
6 garlic, chopped
1 onion, finely sliced
1 capsicum, thinly sliced (or carrot, French beans, cabbage)
1 tablespoon tomato sauce
1 tablespoon soy sauce
1 teaspoon oyster sauce (optional)
1 cup omelette strips ( 1- inch strips )
1/2 teaspoon pepper powder

Method

For omelette:

2 eggs
2 teaspoon milk
1/2 teaspoon corn flour or all purpose flour
Salt to taste ( 1/4 teaspoon )
2 teaspoon cooking oil

Method

Whisk egg, milk, corn flour / all purpose flour and salt together in a medium bowl until soft peaks form ( quantity will be double ).

Lightly coat an omelet pan (11 - inches in diameter or make 2 omelettes of 5 - inches in diameter ) or big / medium skillet with cooking oil and heat over medium heat 1 minute. Pour omelette mixture into pan, spread it evenly and cook until mixture begin to set on bottom.

The underside should be light golden in color.

Once it turn light golden color, remove carefully with a flat spatula. Omelette is ready now. Allow to cool for 5 minutes and cut into 1 - inch strips.

Final preparation:

Cook noodles as per packet instructions.

In a wok / wide frying pan, heat oil. Add chopped garlic and fry for 3 - 4 minutes on a medium heat.

Add sliced onion and fry till golden color.

Add capsicum slices and fry for 3 - 4 minutes or until soft.

Add tomato sauce, soy sauce & oyster sauce (optional) and mix well. Stir well for 2 - 3 minutes.

Add cooked noodles and omelette strips.

Sprinkle pepper powder and fry continuously for 5 minutes or until the noodles well mixed with sauces, vegetables and omelette strips.

Serve hot with any Chinese gravy dishes of your choice.

Noodles with Cabbage & Egg



Noodles with Cabbage & Egg

Serves: 1

You will need

1 packet Maggi / Top Ramen / Foodles instant packet ( Masala / Chicken / Tomato flavor )
1 tablespoon oil
1 onion, finely sliced or 3 spring onions, finely chopped
50 g ( 3 tablespoon ) finely shredded cabbage ( pick tender leaves and remove thick vein )
1 egg, beat well

Method

Cook noodles according to the direction shown on the packet.

In a wide frying pan, heat oil. Add finely sliced onions or spring onions and fry till golden color.

Add finely shredded cabbage and mix well. Cover with lid and cook on a low to medium heat for 5 minutes or until cabbage softens. Do not add water.

Add beaten egg and mix well. Stir continuously for 5 minutes or till done / and the egg well blended with cabbage and onions / fragrant.

Add cooked noodles and mix well. Serve hot.

You will need

1 packet Sunfeast Yippee noodles
320 ml water



Method

Boil 320 ml ( approximately 2 cups ) of water to boil in a pan.

Add noodle block. Now get larger noodles as you do not have to break it to cooking.

Add masala mix. Mix and cook for 3 minutes, stirring periodically.

Maggi Mee / Mi with Spring Onions

Serves: 1

You will need

1 packet Maggi Mee / Mi ( Malaysian & Indonesian noodles )
1 tablespoon oil
1 bunch spring onion, chopped



Method

Cook Maggi Mee according to the instructions shown on the packet ( or boil noodles in briskly boiling water for 3 minutes. Mix seasoning and sauce while noodles is being cooked. Drain out water and mix noodles with seasoning mix ).

In a wide wok or pan, heat oil. Add chopped spring onions and fry till golden color. Add cooked noodles and mix well. You can also add 1/4 cup stir fried eggs or cooked meat or cooked prawns. Serve hot.

Ingredients

2 packets noodles ( Maggi / Top Ramen / Foodles )
2 teaspoon oil
1 onion, finely sliced
1/4 cup shredded cabbage ( you can add any vegetables of your choice )
1/4 cup chopped spinach
1 teaspoon garlic sauce
1/2 teaspoon soy sauce

Method

Cook noodles according to the direction shown on the packet.

In a wok / pan, heat oil. Add sliced onions and fry till golden brown.

Add cabbage and spinach. Mix well. Cover with a lid and cook on a low heat for 8 minutes.

Finally, add cooked noodles, garlic sauce and soy sauce. Mix all the ingredients well.

Serve hot.

Cooking Directions

1, Add noodles and entire contents of soup powder sachet to 2 cups of COLD WATER ( 300 ml ) and stir well.

2, Bring to a boil and simmer to 3 minutes. Optional: Add chopped boiled vegetables / boiled boneless meat for more nutrition.

3, Do not dry the noodles completely. Serve hot as soupy noodles.
