Omelette with Mint Leaves



Omelette with Mint leaves

Makes: 1

Cooking Time: 4 to 5 minutes
Preparation Time: 10 minutes

You will need

1 egg
1 teaspoon milk
1/2 teaspoon corn flour or all purpose flour
1 tablespoon chopped mint leaves
2 teaspoons finely chopped onion
Salt to taste ( 1/4 teaspoon )
Pepper powder to taste ( 1/4 teaspoon )
1 teaspoon cooking oil

Method

Whisk egg, milk, corn flour / all purpose flour, salt, and pepper together in a medium bowl until soft peaks form ( quantity will be double ). Add chopped mint leaves and onions and mix well.

Lightly coat an omelet pan or small skillet with cooking oil and heat over medium heat 1 minute. Pour omelette mixture into pan and cook until mixture begin to set on bottom.

The underside should be light golden in color.

Remove the omelette from the pan carefully.

Flip over omelette and cook the other side. Once it turn light golden color, remove carefully with a flat spatula. Serve with whole wheat bread / milk / fruit juice.

Mushroom Cheese Omelette



Mushroom Cheese Omelette

Recipe from BBC Good food

Serves: 1 - 2

You will need

1 tablespoon olive oil
Handful button or chestnut mushrooms , sliced
25g vegetarian cheddar or normal cheese, grated
Small handful parsley leaves, roughly chopped ( optional )
2 eggs , beaten

Method

Heat the olive oil in a small non-stick frying pan. Tip in the mushrooms and fry over a high heat, stirring occasionally for 2-3 minutes until golden. Lift out of the pan into a bowl and mix with the cheese and parsley.

Place the pan back on the heat and swirl the eggs into it. Cook for 1 minutes or until set to your liking, swirling with a fork now and again.

Spoon the mushroom mix over one half of the omelette. Using a spatula or palette knife, flip the omelette over to cover the mushrooms. Cook for a few moments more, lift onto a plate and serve with oven chips and salad.

Spanish Omelette



Spanish Omelette

Recipe credit - Savvy cook book 2005

Serves-one
Time required -15 minutes

Ingredients

3 eggs
2 teaspoon oil / olive oil
3-4 mushrooms,diced
1/2 piece each,red and yellow bell peppers,diced
3 cloves garlic,chopped
30 gm cheese, grated

Method

Separate the egg yolks and whites. Keep aside.

Heat the oil ( 1 teaspoon ) in a pan and saute the mushrooms, remove from heat and set aside.

In the same pan, saute the bell peppers with the garlic. Remove and keep aside.

Beat the yolks and pour onto a well- greased non -stick pan, and cook over a low heat.

Beat the whites till fluffy [ soft peak] and add it over the yolks.

Sprinkle the sauteed vegetables over the whites.

Top it with the grated cheese.

Cover with a lid ( or bake in an oven ) and cook on a low heat till the cheese melts, the edges become golden brown and leaves from the sides of the pan. Serve hot.

Cheese omelette with tomato



Serves: 1

You will need

1 egg, beat well
2 teaspoon grated cheese
2 teaspoon finely chopped tomato
1 teaspoon chopped onions
1 teaspoon milk
1/2 teaspoon corn flour
1 teaspoon chopped coriander leaves
1 teaspoon chopped mint leaves
1 teaspoon oil / butter
Salt and pepper to taste

Method

Mix all the ingredients in a bowl ( except oil and salt )

In an omelette pan, heat oil on medium heat. Add omelette mixture and spread it evenly. Cover with a lid and cook on a low heat for 10 minutes.

Cook until the egg mixture has set on the bottom but the top is still a little moist. The underside should be golden brown in color.

Take the lid off and remove the omelette from the pan carefully with a flat spatula.

Flip over omelette and cook the other side also for 5 minutes on a medium heat. Once it turn golden color, remove carefully. Sprinkle salt and pepper to taste. Serve with whole wheat bread / buns / milk/ fruit juice.

1/2 teaspoon maida ( all purpose flour )
1 teaspoon oil
Salt and pepper to taste

Method

In a frying pan, heat the oil on medium heat. Add omelette mixture and spread it evenly. Cover with a lid and cook on a low heat for 5 - 8 minutes.

Cook until the egg mixture has set on the bottom but the top is still a little moist. The underside should be a golden brown in color.

Take the lid off and remove the omelette from the pan carefully.

Flip over omelette and cook the other side. Once it turn golden color, remove carefully. Sprinkle salt and pepper to taste. Serve with whole wheat bread / buns / milk/ fruit juice.

Mixed Vegetable Omelette



Mixed Vegetable Omelette

Makes: 4

Ingredients

1 cup ( 200 g ) besan ( gram flour )
1/4 cup ( 50 g ) whole wheat atta
1 onion, finely chopped
1 tomato, finely chopped
1/4 teaspoon turmeric powder
1 green chilli, finely chopped
1/2 teaspoon salt ( or to taste )
1/4 cup coriander leaves, finely chopped
1/ 2 cup + 3 tablespoon water for mixing
1 tablespoon oil

Method

Mix besan and whole wheat atta with finely chopped onions, tomatoes, turmeric powder, green chilli, salt and chopped coriander leaves.

Make batter with water and the batter should be of dropping consistency. Keep aside for 15 minutes.

Heat dosa tawa / frying pan. Apply little oil. Pour 2 ladleful of batter and spread it in a circle of 1/4 - inch thickness.

Cover with a lid and cook on a medium heat for 2 - 3 minutes. Sprinkle 1/2 teaspoon extra oil if required.

Turn it over and cook other side ( till golden spots appear ). Serve with green chutney / tomato sauce / coconut chutney.

Ingredients

1 egg
1 cheese cube, finely grated
1 tablespoon chopped onion
2 teaspoon milk
1/4 teaspoon salt
1/4 teaspoon pepper powder
1 teaspoon chopped coriander leaves
1 teaspoon cooking oil

Method

Beat egg well and mix with all the ingredients except oil.

In a non - stick frying pan, heat the oil on medium heat. Add omelette mixture and spread it evenly. Cover with a lid and cook on a low heat for 5 - 8 minutes.

Cook until the egg mixture has set on the bottom but the top is still a little moist. The underside should be a golden brown in color.

Types of Cauliflowers

Green: is a cross between broccoli and cauliflower in flavor and texture and is milder than white.

Purple: is wild, and is better for health. The color comes from anthocyanins ( found in red cabbage and red wine ) which is an antioxidant. Steam it or eat it raw; boiling will cause the color ( and the nutrition ) to bleed.

Orange: was discovered in a Canadian marsh; has 25 times more vitamin than its pale cousin.
