Dudholi / Dudhali
A delicious sweet (steamed) made with rice flour, coconut milk & sugar !!!
Ingredients
Makes - 1 steel thali (7 - inches in diameter)
Serves: 4
Please use same measuring cup to measure rice flour, sugar and coconut milk. Instead of sugar, one can try with melted and sieved jaggery.
1 cup (100 g) rice flour
1 cup sugar
125 ml thick coconut milk
1/4 teaspoon cardamom powder
2 teaspoons chopped cashew nuts ( optional)
1/2 teaspoon ghee to grease thali

Method
In a bowl, mix all the ingredients gently (Rice flour well combined with coconut milk and sugar and it should be like soft & smooth porridge).
Transfer the rice flour mixture into a greased thali and steam in a steamer or pressure cooker (without weight) for 15 - 18 minutes on a medium to low heat. Cook till done or a a sewer inserted in the centre comes out clean. Keep aside to cool for 15 - 20 minutes and later cut into desired shape & size.
