Homemade Garam Masala Powder (Spice powder for North Indian dishes)
Makes: 35 - 40 g
You will need
25 g cumin seeds (jeera)
1 tablespoon coriander seeds
1 tablespoon cardamom
2 teaspoon peppercorns
5 cinnamon sticks
5 g cloves
1 mace (javithri)
5 bay leaves
1/2 teaspoon nutmeg

Method
In an iron kadai (flat frying pan), dry roast above ingredients on a low heat till fragrant and crisp (approximate roasting time 10 - 12 minutes). Transfer these ingredients into a mixer bowl and grind to a smooth powder. You will obtain a fine powder which can be sieved and store in an airtight container to retain its freshness.
Make in smaller quantity - ie for use for a few times. The fragrance / freshness may be lost if one makes in large quantity and store for longer duration.

nothing can beat the flavors of homemade spice mix..
This is great. Thank you for sharing this recipe. It's much more fun to make this than to purchase the ready-made Garam Masala in a jar.
