Egg Methi Leaves Bhaji
A nutritious bhaji. Serve as a side dish with Rotis / Rice.

You will need
2 teaspoon oil
6 garlic cloves, finely chopped (or 1 onion, finely sliced)
1 bunch methi leaves ( fenugreek leaves)
2 eggs, beat well with 1/2 teaspoon salt and 1/2 teaspoon pepper powder

Method
Wash and clean methi leaves and chop finely.
Heat oil in a pan. Add chopped garlic / sliced onion and fry till golden brown in color on a low to medium heat.
Add chopped methi leaves and stir well for 2 - 3 minutes.
Add beaten egg. Mix all the ingredients well. Adjust salt and pepper powder / sprinkle red chilli powder. Cover with a lid and cook on a low to medium heat for 10 minutes or till methi leaves well combined with egg mixture.

Add chopped methi leaves and stir well for 2 - 3 minutes.
Add beaten egg. Mix all the ingredients well. Adjust salt and pepper powder / sprinkle red chilli powder. Cover with a lid and cook on a low to medium heat for 10 minutes or till methi leaves well combined with egg mixture.
Open the lid and stir continuously for 2 - 3 minutes. Serve hot with Rice /Rotis.
