Homestyle Spicy Vegetable Noodles (made of curry sauce, soy sauce & oyster sauce)

Homestyle Spicy Vegetable Noodles

A delicious mixed vegetable noodles, goes with any Chinese gravy dishes !!!

Serves: 2


1 packet vegetable noodles

Boil noodles according to the instructions of the packet. Keep aside.

For the curry sauce:

  1 tablespoon any curry paste of your choice


For the sauce:

¾ teaspoon red chilli powder

1 teaspoon coriander powder

¼ teaspoon turmeric powder

1 teaspoon oil

2 teaspoon soy sauce

150 ml / 3/4 cup water


Dilute red chilli powder, coriander powder and turmeric powder in 1 tablespoon water and keep aside (spice mix).

Heat oil in a small pan on a medium heat. Turn the heat to very low and add diluted spice mix or 1 tablespoon curry paste.  Stir well for 1 – 2 minute until well combined and water dries up. 

Add soy sauce  and stir well. Now add ½ cup water. Cover with a lid and cook on a medium heat for 7 minutes until the sauce slightly thickens. Switch off the heat.

Optional Ingredient  is Omelette strips

How to make omelette strips? (if using)

For the  omelette:


2 eggs

2 teaspoon milk

1/2 teaspoon corn flour or all purpose flour

Salt to taste ( 1/4 teaspoon )

2 teaspoon cooking oil


Whisk egg, milk, corn flour / all purpose flour and salt together in a medium bowl until soft peaks form ( quantity will be double ).

Lightly coat an omelet pan (11 - inches in diameter ) or big skillet with cooking oil and heat over medium heat 1 minute. Pour omelette mixture into pan, spread it evenly and cook until mixture begin to set on bottom.

The underside should be light golden in color.

Once it turn light golden color, remove carefully with a flat spatula. Omelette is ready now. Keep aside to cool for 10 minutes and cut into 1- inch thin strips with the help of kitchen scissor.

Other ingredients

1 tablespoon oil

1 onion, finely sliced

1 carrot, cut into 1 – inch thin strips

5 French beans, cut into 1 – inch thin strips

¼ cup finely shredded cabbage

1 capsicum, remove seeds and cut into 1 – inch thin strips

Curry sauce

Boiled noodles

1 cup omelette strips or boiled and shredded chicken or cooked prawns (optional)

2 teaspoon oyster sauce


Heat oil in a Chinese wok / any other wide pan on a medium heat. Add sliced onion and fry until pink color.
Add mixed vegetables and stir well.

Add curry sauce and stir well. Cover with a lid and cook on a medium heat for 10 minutes until the vegetables are tender.

Now add boiled noodles, omelette strips or boiled and shredded chicken or prawns (or a mix of  omelette, chicken and prawns / 1 cup) and oyster sauce. Mix all the ingredients well. Stir well continuously for 5 minutes until all the ingredients well combined. Serve hot with any Chinese gravy dishes.
