Chicken Curry with Capsicum and Tomato
Serves: 3
Ingredients
500 chicken pieces
3 onions, cut into cubes
10 cloves garlic, chopped
1 - inch piece ginger, chopped
1 spring curry leaves ( optional )
1 capsicum, cut into cubes
2 tomatoes, cut into cubes
1 teaspoon salt ( or to taste )
1 tablespoon cooking oil

Spice powder:
1 1/2 teaspoon red chilli powder
3/4 teaspoon pepper powder
3 teaspoon coriander powder
1/4 teaspoon turmeric powder
2 tablespoon water
3/4 teaspoon pepper powder

Dilute spice powders with water and keep aside.
Method
Heat oil in a wide frying pan. Add cubed onions and fry till pink color.
Add chopped garlic and ginger. Fry for 2 - 3 minutes on a medium heat.
Add curry leaves. Mix well. Saute for 1- 2 minutes.
Add diluted spice powders. Saute on a low heat till the raw smell goes.

Now mix with capsicum, tomatoes, chicken pieces and salt to taste.
Do not add water.
Cover with a lid and cook on a low till done / fragrant / gravy thickens ( approximately 30 - 35 minutes ).
