Stir fried eggs with carrots and mint leaves
Serves: 2
You will need
2 eggs, beat well
2 teaspoon oil
1 onion, finely sliced
1/4 cup carrots, chopped
1/4 cup mint or coriander leaves
1/2 teaspoon red chilli powder
1/4 teaspoon turmeric powder
1/2 teaspoon salt ( or to taste )

Method
Beat eggs and keep aside.
In a pan, heat oil. Add finely sliced onions and fry till golden color.
Add chopped carrots and coriander or mint leaves. Mix well, cover with a lid and cook on a low heat for 8 minutes.
Add beaten eggs, salt to taste, red chilli powder and turmeric powder. Mix well.

I did egg buji with carrot too :)....adding mint is nice idea..looks yum
