Ragi Duddali (with jaggery)



Ragi Duddali (with jaggery)
( A very delicious sweet in Konkani Cuisine. Good for health too !!!)

Serves: 4
Makes: 1 steel thali (7- inches in diameter)

You will need

Tip: Please use same measuring cup to measure ragi, milk and jaggery

1 cup (100 g) ragi flour (finger millet)
1 1/2 cup milk
1 cup jaggery (melted & sieved)
2 pinches cardamom powder
2 teaspoon ghee

Method

Heat a non - stick pan. Add ragi flour, milk and jaggery. Cook on a low heat for 15 minutes. Stir occasionally. Cook till the mixture leaves from the sides of the pan and thickens / dark brown in color. Sprinkle cardamom powder and mix well.

Grease a steel thali with 1 teaspoon ghee. Spread ragi duddali mixture evenly, sprinkle remaining 1 teaspoon ghee on top and gently smear ghee evenly with a flat spatula.

Cut ragi duddali to desired shape and size only after it fully cools to normal temperature.
