Kesari Bhath (with rice)
Serves: 4 - 5 dessert cups
You will need
2 tablespoons ghee
200 g sugar
225 g cooked rice ( do not overcook rice. Each grain should be separated)
1/4 teaspoon saffron
1 tablespoon milk
2 pinches cardamom powder
Extra 1 tablespoon ghee
1 teaspoon cashew nut splits
1 teaspoon raisins

Method
In a pan heat ghee. Add cooked rice and sugar. Mix well. Cover with a lid and cook on a low to medium heat for 25 minutes or until done / rice well blended with ghee and sugar / thickens / water dries up.
Dilute saffron in 1 tablespoon milk and mix well. Sprinkle cardamom powder.
In a frying pan, heat 1 tablespoon ghee on a medium heat. Shallow fry raisins and cashew nuts until golden color. Decorate kesari bhath with fried cashew nuts and raisins.
