Chilli Chicken



Chilli Chicken

A very tasty dish goes well with Noodles and Fried Rice !!!!

Serves: 4

You will need

2 tablespoons oil
500 g chicken, cut into small pieces
8 cloves garlic, finely sliced
1 - inch ginger, finely sliced
2 onions, cubed (separate each layer)
4 green chillies, slit lengthwise
1 cup water (100 ml)
1/2 teaspoon salt (or to taste)
1 tablespoon pepper powder
2 teaspoon chopped spring onions, very finely chopped

For the sauce:

2 tablespoons (30 ml) red chilli sauce
2 tablespoons (30 ml) tomato sauce
3 tablespoons (45 ml) dark soy sauce

Method

Wash and clean chicken pieces. Drain out water completely. Wipe chicken pieces with a kitchen towel.

In a small bowl, mix red chilli sauce, tomato sauce and soy sauce together. Keep aside.

Heat oil in a wide pan. Reduce heat to medium. Add chicken pieces and fry for 5 minutes. Cover with a lid and cook on a low to medium heat for 10 minutes or till the chicken pieces softens.

Add sauce mix and stir well for 3 - 4 minutes on a low to medium heat.

Add finely sliced garlic and ginger. Saute for 3 - 5 minutes or until light golden color.

Add cubed onion pieces and slit green chillies. Saute for 3 -4 minutes.

Add 1 cup water and salt to taste. Cover with a lid and cook on a low to medium heat for 12 - 15 minutes or until the gravy thickens and onion well blended with other ingredients and chicken pieces.

Sprinkle pepper powder and decorate with chopped spring onions. Serve hot with Noodles / Fried Rice.
