Vegetable Fingers & Vegetable Cutlets

A very tasty & crispy evening snacks !!!

Vegetable Fingers

Makes: 4 - 6

You will need

1 tablespoon oil
1 tablespoon chopped onion
6 cloves garlic, chopped
1/2 teaspoon red chilli powder
1/4 teaspoon turmeric powder
1 carrot, grated
1 potato, boiled and mashed
1 bread slice (brown bread / whole wheat bread)
1/2 teaspoon salt (or to taste)
1/2 teaspoon garam masala powder
100 g breadcrumbs
200 ml oil (for deep frying)

Method

In a pan, heat oil. Add chopped onions and fry till golden and crisp.

Add chopped garlic and fry till crisp.

Add red chilli powder and turmeric powder. Stir well.

Add grated carrot and mix well. Cover with a lid and cook on a low heat for 5 minutes or until the water dries up. Switch off the heat.

Dip bread slice in 1/4 cup water and squeeze out water immediately. Do not soak it too long.

Mix squeezed bread slice and mashed potatoes with carrot onion mixture. Add salt to taste and garam masala powder. Knead well and make a soft dough.

Divide the dough into 6 equal portions. Make 6 cm long finger shaped pieces and roll it over breadcrumbs (breadcrumbs should well coated on each vegetable finger).

Heat oil in a frying pan. Reduce heat to medium and deep fry till golden color and crisp on both the sides. Drain and place on kitchen towel to absorb extra oil.

Serve hot with mayonnaise or tomato sauce.

For vegetable cutlets:

Divide the above mixture into 4 - 6 portions and make round or oval shape. Roll it over breadcrumbs (Bread crumbs should well coated on each cutlet. Apply generously.).

Heat oil in a frying pan. Reduce heat to medium and deep fry till golden brown and crisp on both the sides. Drain on kitchen towel to absorb extra oil.

Serve hot with mayonnaise or tomato sauce.
