Mushroom fry with capsicum, tomato and onion

A tasty side dish with Rotis / Pulao !!!

Serve: 3

You will need

1 tablespoon oil

1 onion, thinly sliced (1/4 – inch in width, separate each layer)

¾ teaspoon red chilli powder

1 teaspoon coriander powder

¼ teaspoon turmeric powder

1 tablespoon water

1 packet mushroom (200 g), cut into 2 pieces

1 capsicum, remove seeds and cut into thin slices

1 tomato, remove seeds and extra juice from inside, cut into thin slices

¾ teaspoon salt (or to taste)

Method

Dilute red chilli powder, turmeric powder and coriander powder in 1 tablespoon water and keep aside (spice mix).

Gently clean mushroom and cut into 2 pieces.

Heat oil in a pan. Add sliced onion and fry till pink in color on a low to medium heat.

Add diluted spice mix and stir well on a low heat for 2 – 3 minutes or until the water dries up.

Add mushroom pieces, capsicum slices and tomato slices. Mix well. No need to add extra water.

Add salt to taste, cover with a lid and cook on a low to medium heat for 10 minutes or until the vegetables and mushrooms softens and gravy thickens. Serve hot with Rotis / Pulao.

Recipe suggestion – If you want a dry dish, open the lid and stir well on a low to medium heat for 5 – 8 minutes or until the gravy dries up / well coated on mushrooms and vegetables.
