A spicy potato curry, goes well with rice, idli – dosa varieties, rotis.. A delicacy in Konkani cuisine !!!
Serves: 2 - 3
You will need
1 tablespoon oil
2 onions, finely chopped
8 dried red chillies
1 tablespoon water
½ teaspoon thick tamarind paste
4 potatoes, peel off the skin, cut into cubes and boil separately
¾ teaspoon salt (or to taste)
Extra ¼ cup water (50 ml)
In a mixer bowl, soak dried red chillies with tamarind paste and 1 tablespoon water for half an hour and make a smooth paste.
Heat oil in a pan. Add finely chopped onion and fry till pink color.
Add red chilli – tamarind paste and mix well. Stir well on a low heat for 2 minutes.
Add separately boiled potatoes, salt to taste and extra ¼ cup water. Cover with a tight lid and cook on a low heat 10 – 12 minutes until the gravy thickens and well coated on potatoes (semi – dry in consistency). Serve with Rice / Idli – Dosa varieties / Rotis ..
