Ragi Buttermilk
This cooling drink, rich in proteins, calcium and iron is ideal for a hot summer day. Recipe adapted from Hindu Metro Plus.
Serves: 2
You will need
1 tablespoon ragi
50 ml (1/4 cup) boiled and cooled water
1 cup (200 ml) water
½ cup (100 ml) buttermilk
¼ teaspoon salt (or to taste)
Method
In a small bowl, mix 1 tablespoon ragi flour with 50 ml boiled and cooled water. Make a smooth solution.
Bring 200 ml (1 cup) water to boil. Add ragi flour solution and stir continuously on a low heat for 3 – 5 minutes until the ragi mixture thickens. Keep aside to cool for 15 – 20 minutes.
Once it cools completely, add salt and buttermilk. Mix thoroughly. Serve in tall glasses.
