Tomato Curry
A tasty curry goes well with Dosa / Idli / Rotis. Serve as a side dish.
Serves: 2 - 3
You will need
1 tablespoon oil
15 shallots (chuvannulli / sambar onions), chopped
3/4 teaspoon Kashmiri red chilli powder (dilute red chilli powder in 3/4 teaspoon water)
1 spring curry leaves
1 tomato, chopped (pick well ripe)
1/2 teaspoon salt (or to taste)
1/2 cup water (50 ml)

Method
Heat oil in a pan. Add chopped onions and fry till golden color on a medium heat.
Add diluted red chilli powder and saute on a low heat for 2 - 3 minutes.
Add curry leaves and chopped tomato. Mix well for 2 minutes.
Add salt to taste and 1/2 cup water. Cover with a lid and cook on a low to medium heat for 10 - 12 minutes or till done / the tomato gravy thickens. Serve as a side dish with Dosa / Idli / Rotis ...
