Aloo Methi Malai Curry – A main curry with rotis / pulao in North Indian cuisine !!
Serves: 3
Ingredients
1 tablespoon oil
1 onion, finely chopped
2 teaspoons ginger –
garlic paste
3/4 teaspoon red chilli powder
1/4 teaspoon turmeric powder
1 1/2 teaspoons coriander powder
1 tablespoon tomato puree
1 bunch big size methi leaves or 3 small size methi leaves
(fenugreek leaves / uluvayila)
1 potato, cut into cubes and boil separately (reserve ¼ cup
stock)
3/4 teaspoon salt ( or to taste )
50 ml water (1/4 cup)
2 teaspoon fresh cream
Method
Dilute red chilli powder, turmeric powder and coriander
powder with 2 tablespoon water and keep aside ( spice mix).
Add ginger – garlic paste and fry on a low heat for 1 - 2
minutes until the raw smell goes.
Add diluted spice mix. Mix it well and fry for 2 minutes or
till the raw smell goes and water dries up.
Add tomato puree,
boiled potatoes (along with ¼ cup stock), extra ¼ cup water and salt to
taste. Mix all the ingredients well.
Cover with a lid and cook on medium heat for 10 minutes
until done / gravy slightly thickens / methi leaves well combined with gravy.
Switch off the heat.
Add 2 teaspoon fresh cream and mix well.
Serve with any Indian breads or Pulao varieties of your
choice.
