Shrikhand



Serves: 2 - 3

You will need

Fresh curd - 125 g ( hung and drained of liquid )
Warm milk – 1 tablespoon
Sugar – 75 g ( powdered )
Cardamom powder - 2 pinches
Pistachios or almonds for garnishing

Method

If you make curd with 500 ml milk, you will get 125 g thick curd. Tie fresh homemade curd in a clean muslin cloth tightly. Hang it for draining water ( liquid from curd ) for 3 hours. You will get thick curd. See the photo below.






In a wide bowl, mix curd, powdered sugar and warm milk. Mix well with a hard steel spoon till smooth and creamy. Do not use blender or electric mixer. Finally add cardamom powder and mix well.

Garnish with pistachio or almond slices ( or saffron ) and set aside in a refrigerator for 2 hours.

It’s very tasty dessert / sweet.
