Green Pepper Stir Fry
- A tasty side dish with rotis ..
Serves: 2
Ingredients
1 tablespoon oil
½ teaspoon cumin seeds (jeera)
1 onion (1 big size or 2 small size),cut into thin slices, separate each layer
¼ teaspoon turmeric powder
1 teaspoon coriander powder
1 tomato (big size or 2 small size)), cut into thin slices
(lengthwise)
1 capsicum (1 big size or 2 small size), remove seeds and
cut into thin slices (lengthwise)
½ teaspoon salt (or to taste)
Method
Dilute red chilli powder, turmeric powder and coriander
powder in 1 tablespoon water and keep aside (spice mix).
Heat oil in a pan. Add onion and fry till light pink color
on a medium heat.
Add tomato and fry for 1 minute.
Add capsicum and gently stir for 1 minute.
Add salt to taste and mix all the ingredients well. Cover with a tight lid and cook on a low heat for 10 – 12 minutes until
done / vegetables well cooked / spices well coated on vegetables. Do not add
water for cooking. Switch off the heat. Serve as a side dish with rotis and
dal.
